Chicken Noodle Soup - for 4 servings
7 cups of Chicken Broth
3 Boneless / Skinless Chicken Thighs (cut into small pieces)
1/3 box Bow Tie Noodles
3 Large Yellow potatoes cut into cubes
2 large Carrots cut into slices and 2 stalks of Celery, diced
½ cup of Scallions
¼ cup of diced Onions
Sea Salt
Parsley
Garlic


In a medium sized pot, bring 7 cups of chicken broth to a light boil. Add chicken thighs, scallions, celery, onions, sea salt, parsley and garlic; cook on medium heat for 30-45 minutes (until meat is done).  When meat is about 5 minutes from being done, add carrots.  Season to taste with sea salt (if necessary).

While chicken is cooking, in separate pots, bring noodles and potatoes to a boil.  Drain and set aside until chicken is done.

Once chicken is done, add the cooked noodles and potatoes.  Garnish with extra scallions.  Enjoy.
